"Low Cal Cooking spray Chicken breasts (2 or more skin and fat removed or just get a pack of ready cut chicken if you want) 1/2 teaspoon of chinese 5 spice Salt (to taste) 1 Red Onion, sliced it if you want chunky etc Root ginger (I get the tesco tube stuff) but finely chopped, again depends if you like it alot or not. 3 Garlic Cloves Mushrooms (again if you like more add more) Red pepper, deseed, cut into strips. Green and yellow peppers same. Baby Corn, more if you like, less if you dont. 2 table spoons of tomato puree (get that in a tube) 2 table spoons dark soy sauce (low salt if you want) 1 table spoon Worcestershire sauce 1 table spoon vinegar (like sherry or rice, but if you have normal, bang it in if not spending lots) 1 330ml can of diet cola (I have used ginger pepsi before now) 1 chicken stoke cube 5 spring onions, trimmed and rough chopped. add or remove anything you dont like. Spray a frying pan, add chicken, 5 spice, bit of salt to your taste, cook till chicken starts to brown. Remove and put to one side. Spray again, add the onion, ginger, garlic and mushrooms over medium heat for around 4-5 mins until they start to soften, then bang in the peppers, baby corn, tomato puree, soy, worcestershire and vinegar. Stir it around then add in the cola. Stir it again and bring to boil. Crumble in the stock cube and simmer for about 10 mins. When it goes a bit thicker and syrupy throw in the chicken and spring onions. Simmer for another 10 mins. If its thick enough for you by this time, and the chicken is cooked thru, eat. If you like it a bit thicker, cook for a bit longer. Make rice or zapp a packet. That should make enough for 4 people, or 4 nights " | |||
