Tonight i am making home made Lasagna and a vegie one too with saled and garlic and chesse bread bottle of wine and after apple crumble ice cream .

tonight I made my first-ever risotto! It was hard work, stirring the rice all the time I was adding the stock, but it turned out really well. I put peas, ham and mint in it.

Butternut Squash and Coconut Soup

1 med onion, roughly chopped

2 garlic cloves roughly chopped

1tsp ground cumin

1tsp ground coriander

1/2 tsp hot chilli powder

1 med/lg butternut squash (about 900g)

1 ltr cold water

1 veg/chicken stock cube

400ml can reduced fat cocnut milk

Mist large saucepan with cooking oil and place over a low heat. Add the onion, garlic and spices, cooking gently for 8- 10 mins, stirring till onion is soft.

Peel and chop butternut squash (remember to remove seeds) into 1cm cubes (roughly). Pour water into pan, add stock cube and butternut squash.

Bring to the boil and simmer for 10 mins or so, until squash is soft.

Remove from heat, add coconut milk and blend till smooth.

Return to the heat and heat through but do not boil- simples xx

NB I dont add that much chilli bit each to their own xx

be carful with coconut milk with the sins hun.. Get the light coconut milk if you can..

Was ment to being going out for a meal with a yummy man....didnt get over the door.

So was chinese for us instead.

Spring Roll

BBQ Ribs

A chicken dish.

A king prawn dish

Special fried rice

Prawn crackers

Lager and wine.

Got enough left over for dinner for the next 2 days!
