Okay, so I just popped back to make a note of a cheesecake recipe someone sent me last year, but Mrs ddc has filled up our inbox and it's dropped off into oblivion

So, are you still here? (whoever you were) or does anyone else know of a recipe that involved those posh Italian almond biscuits and probably mascapone cheese or summat.

It may also have involved cherries, possibly as a compôte, though I may have added that myself.

Or do I shell out on the fiver on the off-chance that I saved it in the 'saved messages' folder?

Something like this? :

Ingredients

For the cherry compote

450g cherries, stalks removed

70g caster sugar

1 tablespoon kirsch

For the cheesecake

125g amaretti biscuits, crushed

40g unsalted butter, melted

300g plain chocolate (70% cocoa solids), broken up

360g mascarpone cheese at room temperature (see intro)

75g caster sugar

3 tablespoons kirsch

300ml double cream

Method

1 Pit the cherries and place in a saucepan with the sugar and kirsch. Place over a low heat for about 10-12 minutes until the cherries are starting to soften. Turn up the heat and boil for 2 minutes so the juice reduces and becomes a sticky syrup. Take off the heat and leave to cool completely.

2 Base-line a 22cm spring-form cake tin with a disc of non-stick baking parchment. Place the crushed amaretti biscuits in a bowl and stir in the melted butter. Spoon into the base of the tin and spread to the edges, patting down firmly. Chill for 30 minutes.

3 Melt the chocolate in a heatproof bowl in the microwave for 1 minute, stir and microwave for a further 40-60 seconds. Leave to cool for about 30 minutes (see intro). If you haven’t got a microwave place the chocolate in a pudding basin and place over a pan of gently simmering water, making sure the base doesn’t come into contact with the water.

4 Place the mascarpone cheese in a bowl and beat in the caster sugar and kirsch. Carefully mix in the cooled chocolate. Whip the cream to very soft peaks and fold into the chocolate mascarpone. Spoon over the biscuit base and spread out evenly. Spoon over the cherry compote and chill until ready to serve.

Though due to my delay, it turns out we've run out of double cream, so will have to wait for tomorrow now

He had a recipe and Frisky had supplied the ingredients...

I loved it, later we realised he had used a whole tub of cream and only a small amount of the cream chase...

So basically it was flavoured cream.... I hope he make another one soon...

"Once upon a time someone posted how to make your own pork scratchings. I meant to save it but either didn't, or I've lost it.

I'm pretty sure it was Pearl Necklace, so, since she's left, I'm out of luck.

That would suggest you'd be willing to cook.

It happens occasionally.

I don't think pork scratchings are exactly intensive in terms of cooking

You can't go wrong with chipotle, sumak, honey & soy sauce for a base. Feel free to build around it.

Weird, even by Fab standards...

You might think so, but in Turkey, they do a desert with chicken....and it doesn't taste that bad!

So, are you still here? (whoever you were) or does anyone else know of a recipe that involved those posh Italian almond biscuits and probably mascapone cheese or summat.

It may also have involved cherries, possibly as a compôte, though I may have added that myself.

The Malteaser two layer cheese cake.

Go to the BBC website and look up Malt cheesecake and the recipe will be there. Please bear in mind you only need a slither, it is very moreish and super indulgent. You could end up in a d*unken cheesecake stupor.
