Crispy bacon, avocado and a touch of mayo.

Or substitute the avocado with fresh baby spinach dressed in a tangy ricotta dressing, and leave out the mayo.

Delicious!

Also:

On multigrain bread:

Cheese and sliced banana

Smoked salmon and cream cheese

Tuna and chopped onion

Sliced ripe tomato, freshly ground black pepper and olive oil

On rye:

Pastrami and mustard

On sourdough, I present .........

The Reuben's Sandwich

Decent off the bone ham (or corned beef as in the original version)

Emmental or Jarlsberg cheese, thinly sliced

Wholegrain mustard

Cooked and drained sauerkraut

Russian dressing (tomato sauce, mayonnaise, a little chilli sauce and caviar if you are feeling, truly, decadent)

Butter both sides of two slices of bread; assemble mustard, ham/corned beef, sauerkraut, cheese, Russian sauce

Grill / sandwich toaster until golden brown

Possibly the finest sandwich in the world ......
