Is there a good way to tone down the spice levels, I made some last night and went a wee bit over board on the chillis. It still good just needs taking down a notch. Any thoughts?

I've used coconut milk in the past. Very good and adds an extra flavour. Also tones down any spices.

Try this if you haven't already: if you're cooking with fresh chillis (as any right thinking person should be), rather than chopping them into tiny bits take a whole pepper and put a slit down its length with a sharp knife, leaving seeds in there but unable to escape. Let that drift around in the sauce while cooking and you should get the fresh chilli flavour without the little hotspots you get from chopped pieces (remove before serving obvs unless you want a nasty surprise!)

Turn it into a nacho chilli cheese bake instead. Add cheese sauce (bechemel with added cheese) and a tub of mascarpone to cool it down then serve with nachos

yoghurt or coconut milk both work.

You could also add raw potato (soaks up capsaicin.

Adding lemon also works. Capsaicin (active ingredient in chillies) is an alkaline, so the acid will help neutralise it.

Alternatively I have some man-up pills on special offer

Ah that's a great idea, back from the shop now though with yoghurt. Gonna give that a go. Next time nacho chilli is the way to go though.

Rather then using fresh chilli's you could use a mixture of

Paprika/cumin/cracked black pepper

Always taste as you go,and try to build heat/taste rather then chucking things in

Every day is russian roulette.

Is it red pepper or scotch bonnet?

Although at this point I barely notice 🤣

Hot melted cheese could hurt a bit. Though maybe a good alternative to hot wax if you fancy a snack at the same time.

I've found that grated raw potato works and gets absorbed easily so as not to change the texture of the chilli too much. Just needs cooking out for about 20 minutes.

Try to get Ancho chili powder. It has a bit of a kick rather than full on heat. You can get if online and some supermarkets carry it now.
