Given what we know about long covid how do we know there isn't long term issues ? How long should we wait?

Given we have seen dangerous versions, is there a risk that mild will mutate to killer ?

There's no evolutionary advantage for a virus to mutate to a killer form that would kill its hosts and thus lead to its own demise. It will need to be infectious but not deadly in order to be able to 'stick around' for the forseeable future.

If it were a lab-leaked virus, nobody knows how it will behave or has been engineered to behave.

In the long run, maybe. But there's no intelligence behind mutations so it can get worse... As long as it can "duplicate" and move host before the old host dies.
