that may be so.... but how many people are by choice going to get into a strangers car/taxi.... even from a mental standpoint

Some are clearly already.

I have also seen some clearly genius ideas by Uber drivers on Insta jury rigging up shower curtains.

I think as with everything complacency will come into it.

Look at it this way.

Get on a bus, train or tube in London where people are getting on and off all during your journey.

Or get in a cab where it's only you and the driver.

The company isn't doing too well, cutting lots of staff, like many other IT companies that have disrupted and taken advantage of other countries communities and infrastructure,whilst extracting financially but not contributing or paying equivalent taxes, meaning that other people pay for them to hijack the infrastructure whilst they must continue to pay for the privilege.

Are we talking just lockdown or longer term?

Post lockdown I would expect alot of stuff to go back to mostly normal routines but with distancing rules in place, the biggest changes will be how restaurants etc deal with the rules.

Longer term I would expect most people to return to normal and nothing really changing in day to day life. unless the government impose new laws but I can't see them doing that long term.

I took an uber to St Pancras and another one in Paris two weeks ago. The one in Paris had a temporary plastic screen taped across the back of the front seats and up to the roof. They both arrived in minutes of requesting them.
