Hydration and build up time are big factors in the viscosity. Flavour can be easily affected too by dietry or drinking habits.

The biggest factor for me is the length of the period of excitement. If I have a quickey, my cum tends to be thick and dribbles out . But if I have been going for over an hour of more, what happens is a huge amount of pre seminal fluid (precum) builds up , mixes with my sperm and makes it more watery. All of the above. Some advice I heard of to increase cum volume/viscosity is to eat salad especially celery!

The technique of "edging" - getting close but not coming - also helps.

There is some debate but IMHO larger volume increases the intensity of the orgasm.

Semen is predominantly protein, which will start to "denature" at higher temperatures, which is why you are noticing this. Similar to heat effect on egg whites .
