What defines sexuality: desire or play?

So many forum posts about questioning the existence about what means being bi, straight, fully straight etc. I believe that sexuality is defined by what a person is aroused, not by the physical sexual contact they have had. Here's some hypothetical scenarios some of you may find fun to think about:

THE GLORY HOLE BLOWJOB

Male (John) goes into a glory hole in a busy club full of women and men. Stimulated by the club atmosphere, he sticks his cock out. Cock sucked, he cums. No idea who sucked it, if male or female.

Is John straight, gay or bi? What other info you need to make up your mind about what you think is John's sexuality?

If you were an outside observer and you saw that the blowjobber was a man, but John doesn't know, does it make a difference to what you think John is? Or did this make John gay or bi automatically?

THE GLORY HOLE WITH A FLAP

Same scenario, but there's a flap in the glory hole so John could peep who is sucking him anytime he wants. When he is about to cum, past the point he can hold it, he can't resist his curiosity and lifts the flap. It's a male. John cums anyway (he could not stop it anyway). Is John straight, gay or bi?

LIFTING THE FLAP EARLY

What if John opened the flap and peeped half way through the blow job? He sees it is a man and let's the man continue blowing him, but John loses his arousal and his cock starts to go soft and does not cum. Is John straight, gay or bi? Bi-curious perhaps?

THE MONK

Young male monk, 20 years old, in an all male monastery. No contact with outside men or women now, but he lived before in a town where he interacted with men and women. He has had no sexual contact ever of any kind with another human being. Being young, he has erections at night or in the morning, and sometimes he is unable to resist the urge to wank.

Is the Monk straight, gay or bi? Or is he asexual (since he never had any sexual contact)? What else would you need to know to decide what he is?

Thanks in advance for any opinions.
