I think most people who have 18 - 99 as their age range just haven't bothered to change it from the default. I don't think in the majority of cases it's a conscious choice.

It has to be at least 5 years older than my eldest but older than me i dont care as long as im attracted to them

We use 40-99 just to show we prefer older it's not intended to be a strict set of rules, which is good because it's routinely ignored
