Probably different situation than being a tradie but used to work for a bank. Team lunches, nights out etc. Got sent on a few training courses over in Scotland...

Got quite good mates with a female colleague who worked in the same team, just friendly at first. Then we ended up making sure we we're the last to stay out, take our lunches at different times to everyone else.

I worked away often with a previous employer and they would put us in hotels which were usually premier inn. In my past Hotel Management career, I found that most Corporate guests from one company, stayed in separate rooms, but socialised together in the hotel, or out at local restaurants or bars.

The exception could occur in large Conference centre hotels, where attending delegates from different companies or from other countries met up for their once a year conference.

It was obvious at times to see 2 delegates sneaking away to their room for a catch up Private time together.

Used to be away a lot in my previous career. Hotels, barracks, tents, holes in the ground. Luckily a fair few hotels as a lot of my ongoing training would be at the offices/facilities of the manufacturers of the equipment. Normally the town nearest the random business park they were on. So the time in hotels in random towns with around 1-4 others is probably the closest experience I have to what you describe.

Generally in the forces there's a big drinking culture. So it was pretty standard to be out every night enjoying the local bars and clubs. Many years ago you had a fixed amount of money paid to your for food. So we would live off a bag of chips and spend the rest on beer. Then they changed it to reimbursement of receipts. So then we had to find restaurants that would kindly do receipts that represented drinks as food (as you could claim for one alcoholic drink or a half bottle of wine).

However my experience maybe different to yours. One because it was often with people I'd known and spent time in the field with. But even when it was strangers there's just a culture and bond that just kicks in and guides your out on the town. As for cracking one off or bringing a local back to the room with you no one was too bashful (and most lads happy to goes twos up on said local if the opportunity was there). However I'm not sure how this equates to civi colleagues at all. Seems to me you have to watch your behaviour carefully these days. Don't want HR getting a sniff of any mischief (I think to some extent its the same in the forces now too). My recommendation would be just try and get a measure of who your on the course with first (if you don't know them well already) and test the waters carefully.
