You can book but after a certain date.

Only essential travel booking until then but, I think they might introduce the vaccine passports for hotel visits, could be wrong but I would keep an eye on it.

From my hotel experience, you'll have to contact hotels as each one will have their own ways of handing bookings.

It's possible that hotels will still be following limited capacity sales, ie, depending on how respective local authorities define the latest Covid regulations within their region.

Thus, pre-lockdown in November, hotels were only selling roughly 30% of rooms per night. As far as I've heard, that could well remain the same.
