Sometimes hi how are you works! Especially when all the other messages I've been fielding are either one word or obscene.

Say something that makes it clear you've read and paid attention to the profile you're responding to. If you nearly but not quite meet their criteria then say so - cheeky but able to accept a no can make friendships, goodwill is important on a site like this, you have no idea who knows each other.
