If I send a message to someone and then delete it, does it delete for the recipient?

No. It’s still in their inbox until they delete it.

The only way to make it dissappear is to delete your user account.

Thanks ....good old Bridgend, used to visit a cafe/chip shop their when in town for a meeting.

Unfortunately not but it may show in a message thread, if you replied it will be visible from your sent otherwise as far as I'm aware it's gone

Try messaging the other user again. The deleted messages may reappear on the thread. It’s a real pain if you’re on a couple’s account and trying to organise a surprise for your partner.
