We're fairly new on the site and we are anjoying the chat rooms, we've now worked out how to stop PM's popping up!It was very frustrating just as things were 'hotting' up and we couldn't see what others were typing because of the PM boxes

Is there a way of finding out the chat history as there might have been a couple of people we were interested in or should we wait for them to find us if they're interested too?

I'm not aware of a way that a normal user can recover chat history. I think this is limited to admin

Private messages are covered in the "chat room" section
