SPTH is all you need if double jabbed. Your airline should send you a link also. 48 hours before landing is ok.

I have the spth app installed and an trying to complete the form but currently stuck at the section adding for the hotel address.

There is a dropdown box where you have to choose the Province, none of them are Gran Canaria or the Canaries so have no idea which province to choose?
