Sorry folks ive been among the english! Seems they like their lamb really rare. I was brought up with my mum roasting it till it was totally cooked through and im not squeamish but watching them nosh through barely cooked lamb is weird. Anyone else? Is it an english thing? I have the same reservation on roast beef. Ie its roasted not just tickled with a flame.

Oh no Lamb needs to be well cooked, I'm with you on that. Beef as well. The only thing I like cooked medium rare is steak. Everything else needs to be cooked through.

Longer you cook it less the flavour simples. Getting more and more chefs that will not ask how you would like it and serv best for flavour.

yup was in a steakhouse recently with the caption if you want it well done look for another venue.

Im all for folk having there meal how they want but more and more chefs see it as insulting to there trade to turn out in their opinion sub standard meals

Like all meat it depends on the cut and just how long you like to chew as to what is the best way to cook, but it’s deffo not an english thing to have Lamb rare. What I would say is it is a point that many older people do not like their meet cooked under, that is likely a legacy from what they actually bought in yesteryear !!
