VERY familiar with this debate.

When I grew up, it was always corned beef.

Prefer to use sausages nowadays though.

I think this is a regional debate.

In Greenock we use mice for stovies

When I'm in Aberdeen or Dundee its normally beef

Edinburgh was saugages.

There is some regionality to it, but like I said, it was always Corned Beef for me as a kid, but for my girlfriend it was Sausages, and there was only 7 miles between us.

Like others have said, it's a leftover dish, and it woulda had roast of some type, tatties, carrots, onions etc... Traditional the only fresh thing added to it was seasoning and stock or gravy.

In our house growing up my mum would make a big pot of soup with boiling beef. That then went into the stovies with sausages.

Now i make them with lots of different types of sausages.

Proper stovies has beef in it , roast beef , corn beef hash has corn beef not stovies , and mince doesn't make proper stovies either lol stories is meant to have bits of tatties , wee chunks of beef and onions etc

What happened to the half time pie and bovril

Anyway Corned Beef in their stovies
