Glasgow

I remember once out for a family lunch in a very posh place. The whole family was there, from grandparent's to great grandchildren. Maybbe around people20 of us. It was an anniversary celebration . My father, poor bugger, had a wee bit of dementia and never held back, was straight to the point.

Anyway, restaurant was full, waitress asked my father how he would like his steak. . . "Slit its throat and wipe its arse luv" he shouted. . . The whole place fell silent. . .

Rib eye should always be medium or above unlike fillet, sirloin etc. Otherwise the fat content doesn't render down to make a tasty succulent steak but a tough fatty one. From chefs ministry of factoids and boring observations. Med rare almost there but as a chef I hate cooking rib eye wrong as invariably its returned as tough. Dumbasses .

Was in south africa two years ago and went to a steak house. I ordered mine rare and my friend asked for well done. The waiter said chef wont do that and a ten minute argument started. The chef came out in the end and said quite plainly "if you want crap meat take yourself of to macdonalds as they do a really good job of ruining meat. If you want a nice steak cooked properly stay. Im not cooking it well done so if thats what you want then leave as its not happening!" We stayed i had mine rare and loved it. He had chicken lol.

Always medium rare. I used to prefer well done till b/f had me taste a medium rare steak he was having and it totally changed it for me. The sight of the blood had always put me off before that. I remember reading a chef who said if you ask for well done you are probably going to get the worst steak they have in the kitchen.

Love the way they do them in the US. If you find a good steakhouse then they have them black and a little crispy on the outside but totally pink and soft inside. Haven't found anywhere over here that comes close to doing them that way unfortunately.

"Have you tried Baby Grand at Charing X?"

No. Is it good?

Was trying to find out the difference between the steaks here and abroad. The best we had was in a place called Cut. Went there as it's supposed to be the best steak restaraunt in Las Vegas. Looking at their menu just now and it says they finish their steaks under a 1200 degree broiler. Think that may be part of what makes them different.

Baby Grand is a world apart and you can stand and watch (and instruct) the chefs while they work.
