It will depend on your strengths as a chef, and if you can see a niche that will take off. Is there a gap in the market youcan fill. Remember that tastes change fast, and people are fickle.

Glasgow's crap for restaurants...very mixed....chardon d'or has been the best in Glasgow for a long while....but do some Market Research on Edinburgh Restaurants...3 Michelin Star Restaurants...Glasgow ..0....Just an opinion from the trade.

We love Kama Sutra on Sauchiehall Street, and Chaoprya.

Btw, if you ever fancy a quick snack, Via Italia near Central Station is delicious and really good prices.

For ltalian food keep away from the city centre places,local eateries who rely on return customers serve a better quality of food.

Theres a wee place not far from you with an excellent chef who learned his trade under Andrew Fairlie...

I have eaten in a few Michelin starred restaurants, some were really nice, some were okay. If you enjoy the food somewhere you don't need a star to tell you it was a good meal.

Cafe Gandolfi is always very good as is their newish restaurant... Gandolfi Fish.

The Ubiquitous Chip in Ashton Lane is by far my fav place - been to most of the above and the Chip is still my favourite

Its expensive though but your paying for top food
