Soup anyone????.....

Huge soup fans here in BackofBeyond and today's "soupe du jour" is chicken leek and tarragon finished off with a creamy swirl. I always try to have a pot on the go.....so....what's YOUR favourite? And....any good recipes to share?........Jintz

And earlier this week, courtesy of a very nice Perthshire restaurant, I was introduced to a rather tasty new one; Chicken & Leek with Tarragon.

Shoosht you! They all think I made it out of my head! Mine was ok...theirs was better though.....must have been the company that made it so good x

Minestrone: small dice equal parts onion celery carrots and leek. Sweat, dont colour till you get all the goodness out. Finely chop fresh rosemary thyme and blacl pepper, cook out for two minutes. Squeeze a tin of chopped tomatoes between your fingers and add a tablespoon of tomato puree and cook for two minutes. Small dice red green yellow peppers and courgette taking out the middle of the courgette as it goes to mush. Add the rind of some parmesan cheese and water . Cook for ten minutes. Add some pasta or cannelini beans, fresh chopped oregano and parsley and salt to taste. Finish with some good extra virgin olive oil when serving. Enjoy x
