You don't need goose fat, just really hot oil - olive oil works well, get it smoking before you put the potatoes in - makes them go really crispy

for me perfect roast spuds par boiled till fluffy edges run through seasoned flour preheat goosefat till almost smoking place spuds in toss lightly sprinkle of paprika (sweet) would sit down to a plate of these on there own
