"My mums clootie dumpling. Never did remember the recipe and she's gone now..." My Mum's handwritten recipe runs 6 oz Sugar 8 oz Sultanas 8 oz Currants 1 lb Plain Flour 3 dessertspoons Treacle 1 teaspoon Baking Soda 2 teaspoons Cinnamon 1 teaspoon Ginger 1 teaspoon Spice 8 oz pkt Atora Milk to mix. Cook for 4 hours .......................... the 'cook for 4 hours' meant sitting wrapped in muslin (tied at the top) on an upturned plate in a big pot with just enough water boiling away at the bottom to continue to create steam, topped up as required. As with so many recipes, there's no hard and fast, right or wrong way. I reckon the spice mix is probably unique to each cook. Good luck if you try it. I hope it's close to what you remember. | |||
