Left over mince and potatoes or corn beef?

We always had it on a Tuesday after mince the night before. The Mrs says that corn beef is the real deal!

You can't have stories with corn beef. That is corn beaf hash. Square tatties onions and tatties is the stories I like. But any meat wit it is OK and some like gravy with it which is not stories either.

It's non negotiable- left over roast beef with tatties and onions. Best served with oat cakes and beetroot.

Corned beef hash is exactly that - corned beef with tatties.

Anything else is something different allogether.

Simple.

This is correct.

I’ve pals in the west coast that hadn’t heard of Stovies and wonder if it originated from the North East of Scotland?

My mum's recipe, she was from Fife as a bairn, then Edinburgh as a grown up.

Chopped onions fried/browned in lard in the bottom of a big pot, then chopped tatties and meat added (sausages, mince, whatever was left overs) a bit of salt and pepper and water added until it covered the mixture. Then simmered for a long time, until the tatties were loose, sloppy and breaking apart. Then beef gravy granules added to add taste and give thickness to the stirred sloppy blend, and stirred a good bit to slightly break the tatties.

Served in a bowl with a couple of slices of buttered bread on the side. Heaven!

My own veggie adaptation. Vegetable oil instead of lard, Linda McCartney sausages in with the tatties, and onion gravy granules added. Pretty close approximation and no animals were harmed in the making of this movie!

"Anyone for sloppy seconds?"

With corned beef it was always tatties boiled and mashed with the tinned corned beef. Not sloppy, and more akin to mashed tatties, but with a bit of protein in it. And nothing like the delicious flavour and texture of actual stovies.

Exactly this. Although apparently it’s also a thing locally to make a well in the middle and fill it with milk Never tried that, I’ll keep my milk to a glass please

Aberdeenshire

In many bars in the north east of Scotland, stovies were served free at 9pm as they sobered everyone up and folk could drink more.

Stovies are beef, onions and tatties and of a stodgy consistency, they are suitable for a colder climate, different from the thinner Irish stew or American corn beef hash.

Anything else isn’t stovies.

Square, or Lorne Sausage is originally west coast, but now popular in the north east.

Link sausages, potatoes and onions. All boiled in one pot. Mashed together a little before the water evaporates.

Serve with bit of ketchup because I'm not a purist!
