Do it East to West, the West coast is a lot more scenic than the East.

From Inverness I stopped in at Dornoch, which was nice and then drove straight up and stayed just outside Thurso. Do John O Groats but mainly just to take a picture of the sign and say you've been there. West of Thurso it starts to get more interesting. You've got Smoo Cave, Durness - which has a big beach to walk along. Then went down and stayed at Kylesku, had a lovely seafood dinner in the hotel there. You could go to Sandwood Bay beach. You need to park up and its about an hour walk to get to it but it's so peaceful there. After Kylesku went further west and visited clachtoll and achmelvich beaches, if you get a nice day you could believe you were in the Caribbean. Further down you have Lochinver which has a nice pie shop right at the water. There were deer cooling off in the water when I was there. Go to Ullapool and eat in the seafood shack. Further down is pooled, Gairloch and Torridon to pass through. Maybe drive the mountain road over to Applecross and stop for a drink there. The last place I stayed was Plockton, lovely wee village on the water with palm trees and a great seafood restaurant.
