Can't say there's any emergency services uniforms in particular that are a turn on for me.

I do like a hot guy in scrubs though (hello McDreamy fantasies).

And I'm partial to a man with broad shoulders and nice arms in a polo shirt and utility trousers, he can keep his steel toe boots on
