I followed a rexepie out of a Scottish cookbook once made the stovies with left over lamb they were amazing, but normally onions and sausages..

As far as I'm concerned stovies have to be made with either leftover lamb (or even better, mutton) or leftover beef & dripping. Cooked long and slow and served sprinkled with pinhead oatmeal.

Not too sure about the oatmeal, but must not be runny, definitely must sit as a heap on the plate.

Just need a suitable dessert to follow.... spotted dick? ( less emphasis on the spots btw!).

My Gran’s stovies were the best, made with whatever was left from the Sunday roast (usually Beef) and potatoes and veg and Beef dripping

stew, carrots ,pumpy peas,onions and sausages ..... now that’s a pot o stovies Ofcourse finished off with crusty bread.

I grew up with my mum using corned beef in ours.

But I've switched over to sausages and prefer them that way.

Like others have said its meant to be a leftover dish however, so it really should be whatever is left from the Sunday "roast".

Stovies - Mostly potatoes, a meat and gravy/stock all mashed up with some lumps left in it.

There is a Wikipedia article for it.

Sausage and red onion. Few herbs. Tend to use Cumberland Sausages if I make them. It's also one of the few things I like ketchup on!

Traditionally stovies has always been made with the leftovers from Sunday lunch.

So in my group of friends you could always see who had a posher upbringing than those who did not. Beef and lamb for the posh ones sausages and square for us scummies lol

Still to this day make my with square, regardless of Sunday roast.
