Simple reduction of a little wine in the pan.

More important question:

Which cut? I reckon fillet is the most expensive for a very good reason.

It would have to be whatever the cheese sauce was on my birthday steak at "Rock Me Burger" in Chiang Mai, Thailand last year. All the food there was fab

Peppercorn, garlic or stilton.

Fry onions till just going crispy, place steak on top and add whatever sauce you like over the top. Baby potatoes and steamed veg on the side

For us the Mrs would have a Blue Ribeye with peppercorn for me I’m a Fillet with a Mushroom sauce medium rare nom nom

Usually just have it without any sauce

Just medium

But it would be bearnaise if I had to choose

Although their would be more chance of me putting some good old HP brown sauce on it

I got a taste for green chimichurri in Argentina a few years back. It's starting to be more popular here and whenever I see it that's what I'll get.

It gets stuck in my teeth though, so it's not one for on a date.

I dont especially like any sauce with decent steaks ..garlic butter is enough for me..

Should I have a cheaper cut then maybe peppercorn/stilton/ mustard.
