Healthy meal ideas

Any ideas for quick healthy meals please? I tend to bulk cook and freeze or cook enough for a few nights. My favourite meals are chilli and Thai king prawn soup!

I've heard as a perfect balance of everything you need is beans on toast with a bit of salad. Sounds weird I know.

5% Pork Mince, bag of stir fry and a tub of slimming world hoi sin sauce . Quick and lovely

I meal prep

Stews,chillies, stir frys, med roast veg, quiche

But stir frys are the quickest

I use spiralized courgettes, carrots, sweet potato, celeriac , squash

Onions pulses pumpkin seeds

Shredded chicken beef pork venison

Fish prawns

Cook and shred into portions then freeze

Have a number of home made tomatoe based garlic spicy sauces to add both refrigerated and frozen

All over the place! Northwesr, , Southwest

A quick Mediterranean cold salad?

- two cans of tuna

- one can of chick peas

- diced onion, garlic and pepper

- two boiled eggs that you then dice

- herbs (salsa, thyme, oregano etc)

- flavoured with olive oil and balsamic vinegar

5-10 mins to prepare. Very healthy and oh so yummy

To my mind some meat is healthy ?

In my chillies stews and curries I do add extra lentils beans and pulses along with more veg

My chilli will have lentils, bell peppers courgette and celeriac in it

That said if meat reduction is the plan lentil verts added to any mince dish will virtually go un noticed xx

I make up batches of basic tomato sauce for meatballs, chillis, spaghetti bolognaise etc. If I buy or make meatballs I bake them in the oven first on a roasting tray so that the fat drains out and to give them so colour x

Do you freeze the veg or just the meat? I batch cook my lunches but only like doing 2 days worth! I normally do chicken, rice and veg but add chilli and onions to the rice.

Easiest go to for my prep is lasagna. Make a decent tray each week.

If you like meat a really quick and healthy 15 minute meal;

Chop up frying steak, marinate with red wine/ soya sauce and leave in fridge. Only needs 15 mins but can leave longer.

Cook rice and a bit of veg.

Stir fry steak, reduce down marination sauce with it.

Dish up and go.

Some great ideas on here. I do a red Thai prawn curry which you can freeze and also a Thai green chicken curry which can be frozen if you take it out before adding the green beans and new potatoes. Just do them separate and add to the rest of it.

I cooked a Chicken Tikka Masala tonight - low GI and very easy. Takes about 10 mins of prep and 16-18 mins to cook. Made a big pan full so will take some to work tomorrow and freeze the rest.
