I have a friend who will be staying once a week at my house until the summer.

I am happy to cook for her and try and eat Vegan food once a week.

Anyone have any decent recipe/dishes I can have a bash at?

Try the Green Roasting Tin recipe book, they have some great ideas. I like the broccoli and squash sticky rice.

Tacos are always super easy. You can make various fillings so it’s still a sociable dinner even if you have a vegan option as well as meat.

"Casereccia pollo piccante" is a spicy chicken pasta dish in a rich creamy sauce. You might have had it at Zizzi's.

Delete the chicken, and swap the cream for soya milk and it's the best vegan meal we've ever had.

Recipe available online.

Typically, I can't find the book right now (it's called Prashad, 100% recommend for veggie Indian food), but I've got a great enchilada recipe I'll message you.

The BBC Food website used to be great (not been on it for yonks). You used to be able to search recipes by Vegetarian, Vegan etc.

Might be worth a look?

The Minimalist Baker blog has loads of great vegan recipes (you can filter for vegan only).

Good general ideas are chillis (I like black bean and squash), curries (daal, chickpea, veg, Thai curries with tofu), stir fries (veg, or with added marinated tofu/tempeh), Mediterranean roast veg/hummus/mezze, soups, lots of pasta dishes (google "kale lemon tomato pasta" for a good one-pot recipe) - the list goes on...!

Chickpea curry and rice is always nice, with naan.

Veggie enchiladas or fajitas (without there cheese) are also quick easy one too

soups are quite easy & work well this time of year.

I use lentils & sweet potatoes, garlic, some miso stock, & onions & green & red peppers.

-Sometimes i'll add a little bit of pasta if you want to thicken it.

Vegan pizza is also worth a try, if you want to make something quickly.

Stir fry is quickest, easiest and healthiest.

Mushrooms, pepper, red onion, sugar snap peas and baby corn all in a giant wok. I use garlic infused olive oil but veg oil is ok. Bit of seasoning and its a good un.

Do it with rice or noodles (I use egg but vegan ones available).

Drizzle with sweet chilli sauce, or other of your choice, on serving (although you can mux in the wok if you prefer).

Tastes great done properly. All prepared, cooked and served in under 15 minutes. Hardly any clearing up after either.

Asda do vegan crispy spring rolls which are quick and easy and taste good.

I have veggie friends who say they prefer mine to a proper chinese because it is non oily, you can taste the veg and it has lots of texture.

I love my meat but happily eat this a couple of times a week.

I had some of those spring rolls from ASDA at the weekend, they were very very good!
