The best paella ever....

margate sumwear by the sea

My recipe.

250g of Spanish chorizo

150g of Spanish pepperoni

200g of Spanish peri chicken

1 jar of tomato source.

500g of rice

1/2 a mug of green pees.

1 1/2 tbsp of mixed herbs

3 tbsp of smoked paprika

2 tbsp of turmeric

1 1/2 tesp of hot chilli

1 1/2 tesp of garlic

1 tesp of cinnamon.

Cook all together while stirring and slowly adding water till evening is cooked and the rice is thick with source but not runny.

Then serve and enjoy.

Recipe does approximately 5-6.

It's more like a paella casserole but no that's not paella!

Plus saffron - good call whoever said it - there is no substitute for it. It's like making soup without a bay leaf. You know when it's not there.

Traditionally.. Risotto is continuously stirred and paella is never stirred although I find with my cheap paella dish I get hot spots which makes the rice stick. I cheat and move it around

I tend to find it "bitty" if you know what I mean. Whenever I've had paella in the past it's almost like there are grains of sand in it.

It's a dish I REALLY want to like, but the sand effect has put me off.

Have to say having spent s lot of time in Spain over the years as a child through to adulthood I can honestly say that no self respecting Spaniard with a modicum of taste and respecting their culinary tradition would ever cook a paella combing the ingredients as outlined in the recipe given. There are essentially three main variations of the classic dish, paupers, mountain and coastal. The common elements involve proper local rice, onions, chorizo, pimento and saffron. The protein elements vary, coastal using fish and shellfish, mountain using rabbit or chicken, pauper uses either broad or butter beams and green beans. Over the years the various traditional recipes have been mixed up to create the western idealised version mixing various elements of each!! Each to their own!!
