Well i've gone and treated myself to an old fashioned chip pan (simple things please simple minds lol).

Soooo, lard or oil ?

Keep the temp low for first cook, take them out for 10 mins turn temp up to 170 ,perfect chips everytime.

It's a 5 litre pan, where the hell would I get around two litres of duck fat - I imagine that would be sublime tho

I imagine most of the supermarkets will have loads left over from Christmas. You could try a peanut oil/duck or goose fat mix?

It's gotta be lard, but when you've chopped yer chips, rinse them in cold water to get rid of the starch, then dry them to prevent spitting before you put 'em in the chip pan

Oh, and red spuds every time

I run a restaraunt in London’s west end

Any fat in a pan has a shelf life

Heat up cool down heat up cool down it will degrade

You get fine particles in the oil it degrades

You have to change your oil regular

If you only cook chips in it it will last longer

Any animal based fat is exactly that animal based it will go off

If you use beef dripping and veg lard providing your pans covered and you only doing chips should last 6-7 weeks then change

Try sweet potato chips

Cut thick double fry at least lower temp tho as the sugar content burns easy

Nice with a cream n chive dip

Thanks for the advice, I'd never leave it cooking away, I do need a thermometer though , another toy lol

I'm a little confused as to why anyone would take the risk of using a chip pan on a gas hob anyway when it's kinda dangerous and also gas is so expensive. Electric fryer with a thermostat is so much easier!
