Cheesy leeks on toast is good. Rub a couple of ciabattas with a smashed garlic glove, then a small drizzle of olive oil. Sprinkle with cheese and finely sliced baby leeks, season and stick under a medium grill.

Depends what the occasion is really, quick snack for you or entertaining a friend etc ?

If it's a quickie for me I do

fish finger sarnie (microwave fish fingers for the "dead quick" part)

Bowl of cereal

Poached egg on toast " get water simmering) crack egg into it, bread into toaster and when toast pops the eggs are perfect.

Beans in toast (add squirt of brown sauce or BBQ sauce to beans to give them a deeper different taste)

Oooooo I love food chat!

For the vegetarians:

1) Look up Fagioli all'uccelletto - like baked beans but without all the sugar. Fry garlic in olive oil, add a tin of plum tomatoes and braise it for about ten minutes. Add cannellini beans, salt, black pepper and sage. Simmer until you get the consistency you want and enjoy with bread.

2) Grill diced aubergine, carrot, chickpeas, tomato or whatever veg you like until they're soft. Meanwhile simmer some bulgur wheat in hot water, stock and any spice blend you fancy (I recommend Ra's al Hanout) for about 10 mins until it's cooked (alternatively just soak some couscous in hot water in a covered bowl then fluff with a fork). Season, add the veg and top with olive oil, olives, sultanas, nuts, fresh coriander etc.

For the meat eaters:

1) Get some skinless chicken thigh fillets and coat them in light soy sauce and honey. Pan fry in a bit of oil at high heat, or bake in the oven, until it gets a gorgeous caramelisation. Serve it with jasmine rice, fresh spring onions and whatever you fancy.

2) Pan fry some sliced chorizo to release the lovely fat & flavour. Add chopped garlic, fresh chillies and tomatoes until the raw smell goes away. Chuck in a tin of drained kidney beans, chickpeas, etc. Season, serve with some bread and you've got an easy meal.

Brecon

Mart has a great cheese on toast variation.

Make a paste from mayo, worcestershire sauce, mustard, soy sauce and pepper, to your taste.

Mix into grated cheese.

Toast bread.

Spread cheese mix thickly onto toast, covering right to the edge.

Grill until cheese starts to bubble and go brown.

Eat!

Worthing

Tin of vegetable soup, potatoes chopped up really small, sprinkle of curry powder, peas, small frozen chicken pieces. Defrost chicken pieces and chop up more if needed. Steam the potatoes and peas first then soup. Ideal stew for a cold winters evening and quick!

Garlic prawn linguine.

Linguine in for 9 mins.

Whilst that's cooking fry fresh prawns and crushed garlic in a pan.

Linguine out, into a bowl, mix with pesto and squeeze juice half a lemon in.

Serve in a warmed bowl and sprinkle the garlic prawns ontop.

Elegant, simple, quick.
