Here are a few recipes delicious and all Slimming world.

My favourite curry, but of course the main ingredient can be changed to other veg or even meat if you prefer. This apparently makes enough for 4 people. Personally, with my massive portions it manages 3 at a stretch! BTW, this is a SPICY curry. If you prefer less heat, use less Cayenne and peppercorns, or stir in fat free yoghurt/quark/whatever it is you usually use! Hope you enjoy it as much as I do.

Fry Light

1 onion, chopped

25g curry leaves (fresh preferably but I have used dried quite happily)

2 tblsp whole black peppercorns

2 tblsp ground coriander

100ml water

2 onions, sliced

5cm piece ginger, grated/minced

5 cloves garlic

2 tblsp cayenne pepper

1 tsp salt

1 tblsp ground turmeric

8 tblsp tomato puree

1 large butternut squash

100ml water or 50ml water and 50ml passata if you prefer a more "saucy" sauce

500g bag of spinach

1. Fry together the chopped onion, curry leaves, peppercorns and coriander until the onion is cooked and it all smells delicious

2. Scrape into a blender and add water (you may not need it all, so add half then add as you go) to blend into a coarse curry paste

3. In a clean pan fry the sliced onions for a few minutes til soft. Stir in ginger and garlic and cook for about 3 minutes. Add Cayenne pepper, salt and turmeric and cook again for further 2-3 minutes.

4. Finally stir in the tomato puree, the blended curry paste, butternut squash and water or water/passata mix

5. Bring to a simmer, then reduce heat to medium-low, cover and simmer for about 20 mins. Add spinach, stirring it well into curry before cooking for further couple of minutes.

6. Serve with whatever free food you want and gorge yourself!

Slimming World Recipe - Orange Fanta Chicken (Serves 2)Time: 30 - 40 minutes (incl. prep) Diced Chicken Breast (enough to feed two people)Can of chopped tomatosDiced OnionsPineapple Chucks3 Sliced Bell Peppers (I used red, green and yellow to add lots of colour)1 Tsp Soy SauceFry LightCan of Fanta Zero (Orange) *Remember to use Zero to keep it syn free!* First, spray a large sized pan with fry light and set to a medium to high heat. Add the chicken to the pan until chicken is just cooked (make sure not to over do the chicken at this stage). Add a little more fry light to the pan if needed and add the diced onions and sliced peppers. Keep these in the pan until the peppers have softened and the onions have browned slightly. Then add the pineapple chucks, chopped tomatos and soy sauce into the mix. Make sure to heat this mixture up slightly before adding the last ingrediant, Orange Fanta Zero. At this point the mixture will look like a gloopy mess but rest assured it will thicken!! Turn the heat down to a low simmer and leave (covered) for about 20 minutes. Keep checking it as when it does eventually thicken it happens fast! As soon as the liquid thickens turn off the heat and serve immediately with a side of boiled white rice.

Fry light

1 large Butternut Squash

Sage leaves (fresh) I usually use about 10-15 depending on size

4-5 Garlic cloves

Frylight

1 onion, chopped

1 clove garlic, chopped/minced

350g aborio rice (special risotto rice, goes very creamy)

1 stock cube dissolved in about 1.5 litres of water

Few extra sage leaves

1. In a tray lay chopped butternut squash (up to you if you peel, I quite like the texture of it) sage leaves and garlic cloves and spray with fry light, before roasting in 200C oven for about 25 minutes (My oven is fan oven, but also old, so my timings may not work for you! Trial and error i'm afraid, just keep an eye on it til its ready!)

2. In a large frying pan, fry the garlic and onion for about 5 minutes, before adding rice. Stir constantly, frying for another couple of minutes.

3. Add a couple of ladles of stock and stir on and off until the rice has soaked it up. Add stock a ladleful at a time, until about one ladleful left

4. scrape in Butternut squash and Sage leaves into the risotto, adding final amount of stock. You can also squash the roasted garlic, which will have a sticky sweet flavour into the risotto too if you like, or, as I like, squish it onto some healthy option B bread for your own garlic bread side dish. Nom.

5. When last amount of stock soaked in, stir well and remove from heat. Leave to sit in its flavours while you get the plates etc out, then serve up, topping with extra sage leaves for both garnish and yummy sage hit. Enjoy!

4 Eggs separated

1 tub quark

1 tsp baking powder (1/2 syn)

5 tbsp sweetener

1/2 tsp vanilla extract

3 tbsp fromage frais

fresh fruit of your choice

Pre-heat oven to 180c/350F/gas 4, line 2 sandwich tins, spray with fry light

Whisk the egg whites in one bowl until they reach the soft peak stage

In another bowl whisk together the egg yolks, 4 tbsp sweetener, half the tub quark, baking powder and the vanilla extract. Then whisk in half the egg whites.

Fold in the remaining egg whites with a metal spoon.

Tip the mixture into 2 sandwich tins

Bake in the oven until well risen, golden brown and a skewer comes out clean, approx 20 mins. It will sink when you take it out so don't be alarmed.

Leave to cool for 5 mins then turn out and peel off the baking paper and place on a cooling rack to cool entirely.

Meanwhile take the other half of the quark and mix with 1 tbsp sweetener. I also added fromage frais at this stage too.

Spread half of the mixture on top of one cake and top with fruit of your choice. Place the other cake on top and put the rest of the mixture on top and decorate with more frut.

Enjoy guilt free!!!!

Ps if you dont add the baking soda it is completely syn free.

Banoffe Cake

10 Reduced Fat Digestive, Finely Crushed

3 Egg Whites

2 x 12g Sachets powdered gelatine

75ml/3fl oz boiling water

250g/9oz quark

3 x 200g pots Mullierlight toffee yogurts

3 - 4 artificial sweetener

1 tsp vanilla extract

2 Bananas

1 - Preheat the oven to 190 degrees C / Gas 5 Line a 20cm / 8 inch spring form cake tin with bakin parchment

2 - Place crushed biscuits in a bowl. Lightly beat 1egg white until frothy and add to the bowl. Stir well then spoon the mixture into the prepared tin and press evenly over the bottom. Bake in the oven for 15 minutes and set aside to cool.

3 - desolve the gelotene in the boiling water

4 - whisk the quarkin a bowl until smooth. Stir in the yoghurt, sweetner and Vanilla Extract

5 - whisk the 2 remaining egg whites until stiff, then fold into the quork mixture along with the gelotine liquid.Spoon over the preparedbiscuit basesmoothing the top with a pallet knife and chill for 4-5 hours or until set.

6 - remove the pie from the tin and place on a serving plate slice the bananas and arrange neatly on top - drizzle over melted dark chocolate ( 1 1/2 syns per 1 tea spoon ) if desired or dust with cinamon and serve cut into wedges.

Serves 8 and is 4 1/2 syns on all days

SYN FREE

Pack of chicken liver

4 slices bacon, trimmed and chopped (I used smoked)

1 Onion chopped finely

1-2 cloves of garlic finely choppped

2 tsp fresh Thyme finley choppped

Quark (optional)

Spray non-stick pan with Fry Light. Fry liver and bacon,, about 6 mins, put in a bowl or liquidiser.

Spray pan again and cook onion and garlic until soft. Add thyme. Put with livers.

Blend until smooth adding Quark if needed.

Cool before serving. Can be frozen

Syn free lemon meringue

300g Quark

1 lemon - grated and juiced

3 medium eggs - separated

4 tbspns artificial sweetener

Pre-heat oven to 180C.

Beat the quark in a bowl to make it smooth and creamy.

Add lemon rind and juice, egg yolks and half the sweetener.

Transfer mixture to an ovenproof dish and bake for 10 mins.

Meanwhile, whip egg whites until they hold their shape.

Whisk in the remaining sweetener.

Remove the dessertfrom the oven and pile the meringue on top.

Return to the oven for 5 - 10 mins) until golden brown.

Serve chilled.

Coronation Chicken Cook some chicken (syn free on red) and let it cool off. In a bowl mix together 2 level tbs Hellmann's Extra Light Mayonnaise (1.5 syns) and a splob of fat free natural yogurt (syn free) and as much curry powder as you can cope with. Add 71g ready to eat dried Apricots (B choice) and chunks of the chicken. Mix it round.

Eat with salad and garnish with chopped parsley or coriander.

You can have this on a green day too, but you'd have to weigh out the chicken precisely (113g raw weight) and count it as your second B choice. However you could 'save' a B choice by substituting a chopped apple for the apricots.

Lemon Couscous Cake

4 oz Couscous

8 fl oz Boiling Water

1 Tsp Baking Powder

2 Tsp Lemon Curd

2 eggs

2 Tbsp low calorie sweetner

1 x lemon, rind & Juice

1 Lemon Cheesecake Mullerlight Yoghurt

Method

1 Soak the couscous in the bioling water for 10 minutes

2 While the couscous is soaking, whiskall the other ingredients together. Add the couscous & mix well. Pour into a mircowavable flan dish.

3 Cook in the mircowave on full power for 10 minutes

Works out at about 23 syms for whole cake cut into 8 works out just under 3 per slice or have a smaller slice and syns come down again.

Not at all I am lol thats why I am loosing weight lol thought I would put some recipes up as I have found a passion for cooking since I have been with slimming world

Congratulations on getti g to target. I want to lose 4st, my mum, dad and brother have all been diagnosed with type 2 diabetes, I dont want it so trying to avoid at all costs. I have a gym induction tomorrow morning too.

10 minutes

20 minutes

INGREDIENTS

8 small boneless skinless chicken thighs, raw (approx 600g/21oz)

1 can of diet

1/2 cup (120ml) of tomato paste (puree)

2 tablespoons of balsamic vinegar

1 cup (240ml) of chicken stock

1/2 tsp of garlic powder

salt and black pepper to season

fresh chopped Italian parsley

optional: add 1/4 tsp of cayenne for a bit of heat or 1/2 tbs of smoked paprika for that smokey flavour

INSTRUCTIONS

Stove Top:

Add the , tomato paste, balsamic vinegar, garlic powder and chicken broth to a deep frying pan and whisk to combine.

Place in the chicken thighs.

Bring to a boil, and then reduce heat slightly and allow to bubble until the sauce reduces down into a thick sauce that coats the chicken. (approx 20 mins)

Season as needed with salt and black pepper

Sprinkle with freshly chopped Italian parsley.

Serve with your choice of sides

Enjoy!!
