No not the local takeaway on New Year's Eve but the fantastic "slow cooker"

With cold dark winter nights upon us I'm experiment with new ideas to give me that warm fuzzy feeling and gorgeous a_oma when I get in from work knowing I haven't got to cook (although there was some prep work)

"Spanish chicken and potato" in the slow cooker is a new meal I'm in love with after fancying something different from normal stews.

Anyone else love a slow cooker and what's your go to meal/meals

Love my slow cooker and I chuck all kinds in there.

My current favourite is whatever meat (lamb shanks work well but anything will do), heaps of veg including carrot and courgette, tinned tomatoes, garlic and a whole heap of ras el hanout, couple of hours on high, well lush.

I also like beef cheeks, onion, garlic, carrot, turnip and plenty of barley, beef stock, 8 hours on low until all the collagen in the beef has broken down.

I often do nigella's slow cooked lamb with pasta recipe, but I have to fry off the lamb first because otherwise there's heaps of fat that ends up coating the pasta.

I'm currently cooking a shoulder of lamb in tandoori paste, when I get home tonight I'll shred it and freeze it in portions ready to be used when wanted.

Not far from the truth but if you use canned food you have to take it out of the tin and crisps out of the packets etc

Turn it on in the morning on low and it's ready when you walk in the door

Needs a sauce so you can't chuck a cheese sandwich in it and hope it's toasted when you get home

I've used one a few times and found you have to cut up root vegetables quite small, but red meat doesn't need browning first. Just make sure there's lots of liquid covering the solids.

If you want something like a sausage casserole or skin-on chicken thighs then you'd have to brown them, mince needs the fat frying out of it. Most of the stuff I do just gets chucked in!

I use my slow cooker almost daily, love it. I've also baked cakes in it .. the next thing will be bread to see what that's like, it also makes great yoghurt .

Slow cooked breakfast casserole is amazing to waken up to with bacon, eggs, tomatoes, mushrooms, potatoes and onions. And you’ve got a tasty hot breakfast with a little prep the evening before you go to bed. Keeps you full all morning too.

Have you tried slicing them thinly and putting them on the bottom of the slow cooker, I left some not covered by the sauce/stock and had a similar problem

I know it's extra work but could also parboil them before adding to the pot.

There are heaps of mega cheap ones on amazon but buzzfeed and tasty do plenty of slow cooker features and they are great for ideas.

To be honest you'll find lots of ideas on the internet if you want to.

If you pick something you like eg curry just search slow cooker curry and you're spoiled for choice and they're often rated out of 5 by others.

I don't over think recipes so if I don't like x ingredient I remove it and add something I have got.

This is an example of Spanish chicken and potatoes

4 chicken breasts

800g chopped tomatoes

1 onion

2 peppers (red, yellow or orange)

10 button mushrooms

3 cloves garlic, crushed

1 tbsp tomato puree

3 tsp paprika

1/2 tsp oregano

150ml chicken stock

Potatoes cut into thin slices or small cubes(big ones don't cook through)

I sometimes add chorizo

Cut the chicken breasts in half. Lay the chicken in the bottom of the slow cooker.

Pour the tinned tomatoes over the top.

Chop the onion and the pepper into small chunks and the mushrooms into halves and add to the slow cooker.

Add the garlic and the tomato puree and the paprika, and then stir in the stock.

Cook on medium for 4-5 hours, or low for 6-7.

Yup you just set it to low (takes about 10-12 hours) on the slow cooker and it cooks so gently overnight and it’s ready in the morning when you wake up. Smells incredible too.

I used to do this at Christmas

Pull the lamb

Blend leftover (whole) salt to tast..

Can add cornflour to thicken or you can leave the source nice and light..

Just add veg..

I believe that a slow cooker uses about the same amount of electricity as a light bulb.

So although its on a long time, it will still use much less electricity than your oven(I don't know about gas)

You can also buy one that's the right size for your family rather than the biggest which uses more electricity.

From a cost saving point of view you can use cheaper cuts of meat because the long slow low method makes them taste amazing.

They're not for everyone as some people prefer chicken ding meals and processed food but I love mine

Don't get me wrong I still love to cook the old way a lot when it suits but being bout at work and knowing it's waiting is worth every penny to me.

And you can cook bigger batches and bulk freeze it.

I always do meat joints in mine. Put chicken upside down as all the juices run to the breast. Pork is the best in the slow cooker. I love it. I use mine for at least 4 out of the 7 days a week. Curry, chilli, stews, lasagne, Bolognese. Everything!

I use mine a lot during winter and I tend to batch cook on Sunday, freeze... instant meal through the week as I chose.

I cook whole chicken in stock, beef cubes in homepride red wine sauce with winter veg and dumplings, roast beef or lamb joints. It’s good for cooking a lot of things!

Had one for years they’re absolutely brilliant in the winter. Doesn’t matter if you don’t know what time you’ll be getting in ‘cause it’s pretty near impossible to over cook stuff and if you’ve got a big one just freeze the excess for another day. Fraid I’m not very adventurous in the recipe dept just good old fashioned ‘bung anything in’ casseroles.

Lasagne is done the same as you would normally only it's waiting for you when you get home.

I personally wouldn't do lasagne in mine but only because I love it for chilli, stews, curry and saucy dishes where it's a bung it in process with minimum preparation required.

Definitely not. After frying the onions ( i also fry mushrooms and bacon )and say chicken, add the rice to the pan and stir. Add a good splash of white wine and stir. Pour everything into slow cooker with a pint of chicken stock ( homemade is MUCH better ) and put on high for one hour. That's it, works perfect every time.

As with all cooking I'd advise any newbies to "slow cookers" to search "slow cooker" food safety for hints and tips.

I usually brown ground meat as it's more susceptible to bacteria and I don't cook large items of meat as I don't think it would cook through properly.

If I'm home I sometimes do an hour on high and then switch to low when I go out but that's not always doable

Nope. You can even cook a whole chicken in one and the meat is so juicy and tender.

I always do meat joints in mine. Put chicken upside down as all the juices run to the breast. Pork is the best in the slow cooker. I love it. I use mine for at least 4 out of the 7 days a week. Curry, chilli, stews, lasagne, Bolognese. Everything!

No. It’s lovely. You just don’t get the brown on the cheese at the top. Easier for me as I get more time in the morning. Evenings are always mad with school clubs etc. So I tend to prepare everything in the morning.

Buffalo chicken dip and a spinach artichoke dip going in mine for this weekend as it's a huge sports weekend.

What kind of slow cookers do people use? I have two actual brand name crock pot as I believe that heavy thick porcelain holds heat and flavor much better; I also like the temperature controls and variations better as it can boil for an hour then reduce temp if I set it correctly ahead of time. I also have a huge cooker from kitchen aid that I can fit a huge Turkey in or the entire quarter of beef.

I'm asking because I noticed people talking about things not getting high enough temp/uncooked food/etc.

On mine I've got a metal outer(think metal bucket) and then a thick ceramic type slightly smaller bucket that sits inside the metal one.

When I've finished I put the ceramic one in the dishwasher as the outer metal one has the electrics and doesn't get dirty at all.

You've either got bags or liners to save washing but I don't bother.

I think the bag advantage is in cooking different foods at the same time for freezing for example.

No I haven't but I tend not to add meat in my salads other than tuna but that's obviously just cold from a can

Can I just say I worked in takeaways for years including new years eve and give them a break. They're working their arses off.

Also gammon is amazing in a slow cooker.

Pasta bake is amazing to throw in if you have no time and forgot. Takes half an hour to cook and you just throw 5 ingredients in and wait.

Hi,

Get a sharp knife, chop the liver into small mouth size pieces.

Take the onion and gently slice it, brown the onions lightly until a nice light brown colour.

Take a nice curry sauce and empty it slowly into the slow cooker on low, put in the onions and coat them in the sauce.

Take the liver and open the food bin, slide the liver into the bin.

Place the lid on the slow cooker and ta dah slow cooked curried onions 6 hours later
