This can be found all over the web, bbc food, SW, PofN etc etc
So, for those who care, it's 162 ish kcal per serving (depending on amount of cheese you use)
400g medium spuds, diced (I leave mine with the skin on)
200g swede, peeled and diced.
Small onion (either half or the whole, depends if you like alot of onion or not)
125g green or white cabbage thinly sliced.
40g low fat cheddar, grated. Full fat and more if you don't care about the syns kcals etc
Bit of salt and black pepper.
I have added a bit of English Mustard for a bit of heat. You don't have too.
Do the spuds and swede in boiling salted water until soft, drain, leave to onside.
Get the oven going at 200 (gas 6).
One cal spray a frying pan, medium heat, throw in the chopped onion and cabbage cook till soft then add the spuds and swede, mash em roughly as you want them a bit chunky monkey!
Add salt and pepper to taste, add an egg yolk if you want, I added a lump of mustard instead.
Place in an ovenproof dish, sprinkle the cheese over the top, cook for around 20 mins, or when the cheese has melted and started to go brown.
Eat.
I have mine with extra veg.
Add more spuds etc if going for 5 days (like me)
