Roast pork with crackling, apple sauce, roast spuds and loads of veg today.

Then for the rest of the week it'll be pork sandwiches, sweet and sour, pork in cider...the joint is rather bigger thsn I first thought!

I love that one.

I just cooked salt and pepper chicken with Nando style rice. Also pinch of nom.

Heads up this is 291kcal per serving. Serves 4, or a week if you live on your own

200g basmati rice

1 bay leaf (or dont bother)

1 chicken stock cube

Low cal cooking spray

400g 5% mince (beef)

1/2 or whole onion finely chopped

4 bacon medallions (no fat) diced

2 tsp cajun seasoning

Good shake of the worcestershire sauce

1 medium carrot finely diced

6 mushrooms sliced

Red pepper deseeded and diced

Same with yellow and green peppers

200ml beef stock

Small bunch spring onions sliced

Cook rice as normal adding bay leaf and chicken stock cube before cooking. Put to one side once cooked.

Spray frying pan, medium heat. Add mince, bacon, onion and cook until mince brown.

Add the cajun, good shake of sauce, stir it all in then add the carrots, mushrooms, peppers and pour in the beef stock. Cook for about 5.mins until peppers and carrots start to soften.

Add rice and spring onions, keep on the medium heat until the rice is coated and warm through. Add more cajun if you think you need it. Eat.

Same with spuds/mash, I freeze curries, chillies, Shepherds pie mince, then cook the rice or spuds from fresh

It was really nice, no where near as sweet as the name suggests and only a few ingredients. Will definitely be making again.

Been invited to my local curry house with the kids.

They've perfected new dishes and want a few guinea pigs (metaphorically speaking and not to eat) to try them out before putting them on the menu
