Ok, how best to achieve this?

I have two legs and thighs ready to cook...

Mold

It needs to be dry, so pat it well down before trying to cook.

Your best bet is to brown it off and sear it in a frying pan before roasting

I cook the duck as per instructions in the oven then take out at the required time and use a sharp knife to remove the ( not crispy skin ) then on tin foil put the skin only back in the oven for 5 mins

Take out - perfect
