Just Googled that, never heard of it before

I make it all the time, but can’t be bothered with curds, so just use grated cheddar.

Also can make Rancher’s Poutine, where you add in some ground beef. That one’s better if you use Red Leicester or a tart coastal cheddar, and make your gravy with an oxo cube for extra saltiness.

Caribou poutine. Its cheese curds instead of grated cheese though you can ask for mozzarella on it too. This place also uses skin on fries. They have loads of different extra toppings if you want too including steak, bacon, mushrooms, stilton, pulled pork, soured cream, crispy onions, etc.
