Garlic butter.

Grated extra mature cheddar.

Freshly ground salt & pepper.

And oven-baked, for a decent crispy skin.

I use Pancetta, and pour the juices over the cheese

Don't eat them now but I used scoop out the cooked flesh, mash it with garlic oil and then mix in ham and whisked eggs before filling the baked crisp skins and finally finishing then off in the oven for 20mins.

Scooped mash with cheese, a little butter, cracked pepper and chopped crisp bacon, back in the oven the heat back up and enjoy

But chilli or cheese and coleslaw please, nice crispy skin.
