I’m thinking what to cook for dinner tonight.

I need some inspiration.

What are your ‘go to’ easy recipes?

I don’t want dinner party food. Just something that’s quick and easy and tasty.

I have loads but one of the favourites this week is fishcakes.

Cheapo instant mash with dried parsley, salt n pepper and butter added. When made up mix in a drained can of tuna. Form fish cakes around a chunk of cheese then coat in egg and breadcrumbs. Bake for 20 minutes.

Hellofresh have some great recipes - there's one with creme fraiche, green beans and chicken thighs which is lush.

Failing that, grilled cheese toastie. Or ramen.

Sirloin (Tesco £3.80)

Frozen Tiger Prawns (£4 Morrisons).

Make a butter with butter, S+P, Garlic and Parsley. Paint the cooked side of the steak while the other cooks.

Plenty of lemon on the prawns

Or for the adventurous and short of time out there....

Peanut butter and baked beans on toast (yes together,.... don’t knock it till try you’ve tried it).

Steak - salt and peppered - 3 minutes a side.

New potatoes - 15-20 minutes then mixed with butter

Green beans - steamed for 5 minutes and salted.

Condiment of choice.

Toast and real butter

Start with a thick slice of quality bread

It's critical that you watch the bread under a pre heated grill During it's transition to toast as you don't want it to lightly toasted or heaven forbid black

While hot apply a knob of cold real butter and let the heat of the toast melt the butter before spreading

Corned beef hash:

Some potatoes, cut into 6mm cubes, boil for 10 mins then chuck in a frying pan along with some chopped onion and a tin of corned beef salt and pepper and fry until it's crispy on both side, about 5-10 minutes each side

OK all that will take about 40 minutes but it is very nice

Joe Wicks Mozarella, chicken, chorizo and spinach dish. It's super fast and very delicious.

I find pastas are good too if I can't be bothered. You can shove anything in and it only takes 10-15 minutes.

The unhealthiest but most delicious dish I know:

Smoked bacon, mushrooms and sun-dried tomatoes (not in oil) chopped finely and fried together for 6-8 mins

Fresh tagliatelle, 2-3 mins

1 pot marscapone and half pot of double cream slowly heated until they melt down together, remove before it boils

Combine together in the pan. Serve. Die of happiness (or possibly a heat attack)

Total prep time 10 mins

Cooking time 10 mins

Put some pasta in to cook. Get a frying pan and put olive oil in it. Add julienned courgettes, one or two. Fry until golden brown. Add herbs if choice, salt, pepper. Finally put in some single cream. Throw in the pasta and eat. Absolutely delicious hot or cold.

Prawns will cook the quickest but you can get Chicken, Beef, Pork etc for protein

Chicken fajitas for me, quick and easy but tasty, with crunchy peppers and onions. Small tortillas, cold guacamole, sour cream and salsa with iceberg shredded lettuce

With a fruit smoothie, frozen apple, kale, spinach, banana and some apple juice to mix, blend straight from the freezer, ice cold freshness

Crab linguine. Tin or fresh crab, cherry tomatoes, olives, garlic, chilli, white wine, parsley, lemon, linguine . Put linguine on, Saute garlic and chilli in olive oil, add tomatoes, cook down, add white wine, reduce, turn heat off add crab, olives and parsley. Stir in linguine, grate lemon rind over. Eat.

Gammon in the slow cooker with beans, kidney beans, tomatoe can, some hot sauce, paprika (any spices you have would work) and just get back to it in 6 hours it should fall apart lovely in a smoky flavour kind of way.

That’s not slow though, so a quick one is spaghetti, and 2 mins before that’s done, fry some thinly sliced garlic for until translucent (low heat) add some lemon juice and put the cooked spaghetti in there with a bit of the water it was cooking in, loads of black pepper and Parmesan if you want and that’s nice for a quick, simple tea

All over the shop

Larder Pasta - invented by me out of necessity.

Ingredients:

I packet of pasta of choice

4 tsp Green pesto

1 tbs mayonnaise

1tin of tuna flakes

Parmesan cheese

Black pepper

Serves one. Several times.

Do not freeze. It’ll taste shit.

Method:

All amounts are a rough guide. Adjust to your own taste.

Cook pasta, al dente. Drain.

Add everything else.

Stuff your face.

Fry onions, mushrooms, the stuff you scooped out and bacon. Once all cooked stuff the courgettes from the oven and grate some cheese on top and back in the oven for a bit...and there you have it.

Jumbo king prawn tagliatelle.

Pasta 9 mins

Prawns 8 mins in garlic butter.

Mix pesto with the spaghetti before serving, sprinkle the garlic prawns on top, squeeze of lemon. Perfect!

Here's an inexpensive go to I often knock up.

Make a pasta sauce out of mushrooms, a pepper, garlic, onion, tins of tomatoes, kidney beans and chick peas. Add herbs of your choice, with a pinch of chilli or jerk if you want it spicier. Cook pasta of choice.

The combination of kidney beans and chick peas makes it 'meatier' and there is lots to box up and freeze if you are just cooking it for one.

Have to look that up.

Very similar ingredients. Instead on cutting in half, lob off the ends, scoop out the middle

As you did mix with onions, mushrooms (peppers optional) and then use sausage meat or other minced or diced meat, add tomatoes or tomato paste. Mix well, stuff back into the marrow (wrapped in foil - lower foil with about 10 mins to go) then serve sliced. We sometimes add cheese into the mix too
