Smoked bbq ribs. Smoked with hickory and cherry wood. With home made bbq sauce.

Today it's "mud rub" and spicy sweet rub on the ribs today.

That's my best dish but I do a really good pizza. The couple that run a social in Wales the lady really like my pizza.

Cooked Egg Hollandaise on wheaten bread toped with salmon (sauce made from scratch) for my friend this morning as she showered.

Naked chef role play, tonight is my turn. I enjoyed being treated last night.

Will give cooking just about anything a go.

Speciality, don't have one, though you may find chillies in things you weren't expecting!

Actually, my baked savoury chilli cheesecake is my speciality - won a bake off competition at work with that. And make a pretty mean pork pie!

Nothing like the mass produce ones with mushed up pork, instead, finely diced pork (best cut available) fried with onion and herbs and anything else that takes my fancy at the time, in a home made hot water pastry and generously filled then with a herby jelly. Served with a spicy tomato chutney

I'm really into Yotam Ottolenghi inspired recipes at the moment.

My son went backpacking around Morocco and brought me back some harissa and dried roses which I use quite a lot too.

The thing I don't really do is conventional cooking. Well, I do, but I don't like it. Everything is fusion or with a twist or mad substitutions.

It's usually great. But I never write it down

There are some good Asian markets about that have some really niche ingredients! Also onigiri (Japanese filled rice triangles in a sea wrapper) are another oriental favourite

That's the reason I haven't ever applied for masterchef - should take 90 minutes max to make, cos I embellish everything then it takes me at least 3 hours!! So I need advance warning if you want any

His turkey & courgette burgers with spring onion & cumin are lush. He serves them with sumac but I am not keen on it.

I love tabbouleh too. They are so filling and easy to make. I prefer to use bulgar rather than cous cous.

I loathe Shepherd's pie, as I hate lamb.

I love cooking, and baking. Today I've made a ginger cake, and a lemon drizzle cake and also made Madeleines this morning to go with a special persons coffee.

I'm making chicken and mushroom risotto tonight.

I don't cook as often as I should but I'm fairly good at south east asian dishes, mainly curries in the southern Indian style and a mix of thai and Indonesian dishes. During the winter though I seem to specialise in artichoke soup.
