We use a little butter too (thanks to last tango in paris)

I always put the pan on a low-medium heat as a smoking hot pan will ruin pancakes.

Drop a little butter in the pan.

Once the pan is up to heat I add the mix and let it sit until the pancake mix starts to thicken and go firm on top, this usually means if you lift the pan and give it a shake, it will be loose enough to toss.

Make a deft, firm up/flipping motion and the pancake should flip easily.

Once the pancake is ready, serve with your favourite topping.

There you go, you won't meet a more informative tosser than me!!
