I’m wanting to do a red wine sauce for lamb shanks. Not being a red wine drinker, are there ones for this purpose and what do I do with what’s left in the bottle.

Just get a decent bottle, if you don't want to drink it, save it for a chilli or ragu

Put it in an ice cube and freeze it for using in next cooking

The alcohol is pretty much lost in the cooking process....you need something robust so burgundy or northern Italian type wines...enjoy.

During the cooking process the alcohol evaporates off, leaving just the flavour of the wine. Depending on the dish you're cooking then you can pair the meat with the wine, it does depend on what you're adding to the sauce too though.

Pinot Noir if you are doing a light lamb sauce. Its fruity and complements well. Its not too acidic or oaky which wouldn't be good for a sauce that you want with lamb
