I think the term unicorn was adopted from the wider community. In the population as a whole, a single bisexual woman willing/wanting to meet couples is really rare. So why not straight women instead of bisexual? Well much like the unicorn was prized and desired for its horn and lots of people wantes it, more people want the bisexual woman so that pushes the value of said woman up?
