Being an ex teashop owner, I love my cake/afternoon tea

Anyone want to share a cake recipe they use, have adapted, or just fav cake. Mine:

Teabread

3/4lb mixed fruit soaked overnight in half a pint of cold medium strength tea (I add chai masala loose tea in a bag, to give some extra spice)

Add 6oz of soft light brown sugar a large egg and 12oz of self raising flour to the soaked fruit and fold in

Pour into a greased and lined loaf tin and dent the middle

180c for 1 and a half hours - or when knife comes out clean

Eat warm with lots of melted butter mmmm

No recipe but I’m very keen on Banoffee pie!

But that’s not a cake is it? Or is it? I don’t know.

I’m guessing the clue is in the name and it’s a pie, not a cake?

Can any ex-teashop owners help?!

My mum used to make something called a Yorkshire jam cake. I've never come across them other than when my mum used to make one, it's kind of a cross between a cake and a biscuit.

I've been looking for a recipe online for years to try and replicate it and I've recently just come across one that's not quite the same the pretty damn close.

Made this op . Amazing . Also had it warm with some maple syrup and fresh cream on it . Yum

My favourite cake is Passion cake - a variant on carrot cake that uses bananas and carrots and has a cream cheese frosting- it's Devine!

Got the recipe from The Sunday Mail, but pimped it a bit x

My fave cake to eat has to be carrot cake. The one I have the most requests to make is probably chocolate cake. Though I did get a proposal when I made lemon drizzle for the first time. And my Christmas cake went down really well this year too.

Lemon and Blueberry Cake

Ingredients

125g butter

125g caster sugar

3 medium free-range eggs

175g self-raising flour, plus

1tbsp extra

zest of 1 lemon

100g blueberries

For The Syrup:

50g caster sugar

4tbsp lemon juice

For The Icing:

125g icing sugar

1tsp blueberry conserve

lemon juice, optional

sugared edible flowers (or blueberries), to decorate

Heat oven to 170C/gas 3. Grease and double line a 2lb loaf tin with baking paper. In a large bowl, whisk together the butter, sugar, eggs, 175g flour and zest for 3-4 mins until light. Toss the blueberries in the extra 1tbsp flour, then fold in. Spoon into the tin, smooth the surface and bake, covered with a sheet of foil, for 40 mins. Uncover and cook for a further 10-20 mins until golden and springy to the touch.

Meanwhile, gently heat the sugar and lemon juice until dissolved, bring to a boil and boil for 2 mins. Set aside.

Spoon the syrup over the cake as soon as it comes out of the oven, and leave to cool for 30 mins. Remove from the tin and leave to cool completely.

Sift the icing sugar into a bowl, then press the conserve through the sieve, scraping it off the underside. Stir to combine, adding a little water (or lemon juice), a few drops at a time, until you have a just-runny consistency. Drizzle over the cake, leave to set for a few mins and decorate with the sugared flowers

**i don’t bother with the icing, I just use the syrup

I have supplied cake, and been brought cake also! One of my fab friends has brought me cake based treats on more than one occasion!

wish i could still get Jam rolly polly ..the proper steamed suet kind..saw it last in a transport cafe in 1977. Not the aunt bessy sponge..not even close to jam rolly polly.
