Following on from the New Year trend of diet threads, I was just wondering if people would be interested in exchanging recipe ideas on here, as there are only so many jacket potatoes you can eat before you go mad.

They need to be quick to make (ie after work), and contain things that are actually accessible...not things that you'd need a dictionary to pronounce!

I had it last night and my friend who is currently staying with said it was gorgeous he had 2 servings the greedy bugger..

It was that so juicy thing.. its simple put the chicken breast in cooking bag sprinkle on the seasoning and bake.

I served it with rosemary and garlic roasted new potatoes.. Spray the potatoes with low fat spray... place whole cloves of garlic and fresh rosemary.. place in oven..

Served with green salad.. It was lovely really enjoyed it so having it again tomorrow......

Melt choc in bowl on pan... Whisk in 3 egg yolks and beat the whites... Whisk some double cream and fold into mixture and put into glasses and place in fridge...

My chocolate mousse, based on a recipe from a cookbook, fills a 1.5L rectangular glass dish with sufficient room for a good layer of whipped cream.

150g of 50% chocolate

150g of 70% chocolate

A good knob of butter

Full fat milk

Liqueur such as Kalua, Tia Maria or Grand Mariner

3 Large eggs, separated

Whipped cream (about 500ml unwhipped)

Cocoa powder for dusting

A small cup of very sweet strong coffee, cooled

1. Break up chocolate and melt over a water bath with butter and milk, mix well until homogeneous. Remove from water bath and allow to cool slightly. Stir occasionally.

2. Mix the egg yokes with the coffee syrup and beat well.

3. Make sure the chocolate is sufficiently cooled before adding the egg yoke and coffee mixture to it through a sieve, mix until homogeneous.

4. Add liqueur of your choice and mix until homogeneous.

5. Beat the egg whites until it forms stiff peaks.

6. Fold the egg white into the chocolate mixture, continue to fold until homogeneous.

7. Pour into a glass dish and refrigerate overnight.

8. Whip the cream, and spread over the hardened mousse. Dust with cocoa powder.

Enjoy.

Tiramisu, recipe given to me by a lady who learnt it from her MIL who is Italian.

Sufficient to fill a 1.5L rectangular glass dish.

200g Mascarpone cheese

Sugar

3 large eggs, separated

A small cup of very sweet strong coffee, cooled

Sponge fingers

Liqueur of your choice, like Kalua, Tia Maria, Grand Marnier

1. Beat the egg yokes with about 5 teaspoonsful of sugar until the sugar dissolves.

2. Add the cheese to the egg yoke mixture and beat until homogeneous.

3. In a small flat dish/container, pour in the coffee syrup and add a glug of liqueur.

4. Get your dish ready, open a packet of sponge fingers, place the coffee/liqueur mixture near the dish etc...

5. Whip the egg whites until stiff

6. Fold the egg white into the cheese mixture, and continue to fold until homogeneous.

7. Dip sponge finger into coffee/liqueur mixture one at a time, and line the bottom of the glass dish.

8. Sponge over a layer of cheese/egg white mixture over the sponge fingers.

9. Repeat with another layer of sponge fingers, then another layer of cheese/egg white mixture.

10. Cover and refrigerate overnight to allow the sponge fingers to soak up moisture from the cheese mixture.

11. When set, dust with cocoa powder.

Enjoy.

Baileys Ice Cream profiteroles (or flavour of your choice)

FOR THE CHOUX PASTRY

70g/2 ½ oz unsalted butter diced plus a little extra for greasing

200ml/ 7fl oz water

100g/3 ½ oz plain flour

3 large eggs lightly beaten

Preheat oven 200 C/400F /Gas mark 6

Grease a large baking sheet

Sift flour

Place water and butter into a pan and gently heat until butter has melted

bring to the boil then remove from the heat and immediately add all the flour, beating well until the mixture leaves the sides of the pan and forms a ball

Leave to cool slightly

Beat in enough of the eggs gradually until a soft dropping consistency has been obtained

Transfer to a piping bag with a 1cm/ ½ inch plain nozzle and pipe small balls onto the baking sheet (you can use a spoon if no piping bag but they will be a little mis-shaped when cooked)

Bake in the pre heated oven for 25 mins

Remove from oven and pierce each ball with a skewer or tip of a sharp knife to allow steam to escape

Allow to cool

When cold split the balls with a sharp knife

FOR THE SAUCE

50g/2oz Dark chocolate

150ml double cream

Melt the chocolate in a double boiler or microwave

Remove and immediately add the cream gradually, stirring constantly

THE FILLING

Scoop a teaspoon of Baileys ice cream (or ice cream of your choice) into the centre of each ball

Stack on a serving plate in a tower or into individual bowls and pour over the chocolate sauce

nah then i would have a pan to wash, going back to the no thrills microwave me thinks.. i might have to invent a fishfinger that doesnt get soggy in the microwave..dragons den here i come
