North Bucks

I’m bored on a Sunday afternoon.

Anyone got a decent twist on a recipe or something devastating to cook up in the kitchen.

I’m talking evening meal and something to make for the week as well?

Even just the name of a dish so I can google the recipe.

Thanks.

I enjoy making a lamb tagine in the slow cooker and usually get 3 meals from it. Nice with cous cous.

Hefty Hideaway

I just slung Caribbean chicken curry into the slow cooker. Coconut milk, chilli, garlic, ginger, curry powder, chicken and just about any bit of fruit I can find to chuck in. Today is pineapple, sultanas and dried banana.

I’ll serve it with rice and thoroughly savour it.

It's not a recipe per se, but I've been experimenting with baked chicken breast (low carb diet in my case). Spices and some flavouring on top, vegetables underneath. Really depends on what you like, though. Garlic and bacon never go astray. I find it fairly low effort and low mess.

I make a minced beef and Spicey sausage pasta dish.

I get pork and chipotle sausages (or any other if they aren't available) from Morrisons for this.

Fry all the water from the mince and brown in its own fat.

Put aside then put a little olive oil in the pan and add minced onion, garlic paste and finely chopped carrot and celery.

Fry for 5 minutes then add the cut up sausages.

Fry until sausages are cooked then add the mince and stir thoroughly.

Squeeze in a few inches of tomato puree and add a carton of pasatta and cook for a minute.

Add Italian herbs, salt, pepper and a little sugar and cook down for about 20 minutes.

Pour over pasta of your choice.

It's lovely.

I'm great at making something devastating. Cauliflower cheese is good. With carrots. Proper cauli not frozen. And enough cheese to bung you up for weeks.
