Was just about to say that Outback make the most amazing malt bread. They serve it warm with this lovely butter on the side. Not great for the vegans as its a steak house but the home made version isnt far off. Yummy

With huge apologies for delay, I haven’t been in the site much.

It’s vegan:

Line 10x20cm loaf time with baking paper and grease.

Turn oven to 180C.

Mix together

200g dried fruit (I used dates)

150ml strong hot tea

50g light brown sugar

9tbsp malt extract

2tbsp black treacle (I swapped out half a tbsp treacle for more malt extract)

In a large bowl/mixer sift together

125g plain white flour

150g wholemeal flour

3tsp baking powder

Half tsp salt

Stir liquids and fruit into flours. Quickly tip into tin. Bake for an hour or until skewer comes out cleanish.

Paint top with malt extract. When cool wrap in paper and leave in aurtight tin for 3 days to become squidgy (this is impossible).

I’m going to experiment with ginger and stem ginger for a ginger cake version.
