"My dear Mums Bacon and Onion Suet Pudding . I never did get to ask her how she made it "

Ooh my sister used to make this regularly.

Have a look online for bero recipes. They were a flour producer that used to have a small cook book. I think you can still buy the book online. The recipe in there for Suet pastry is fab, in fact all the recipes work really well and it's the only cook book I've ever used.

My sister's bacon pudding was made in a basin lined with Suet pastry. The filling was chopped bacon, chopped onions and plenty of freshly ground pepper. Seal the lid with pastry, cover as the recipe suggests and steam in a saucepan for a couple of hours.

The best bacon to use is the stuff that's sold as cooking bacon or mis-shapes. It's usually quite chunky instead of proper slices and is cheaper too.

If you look really hard you can still buy loads of this shit. And it is still shit. We had a retro party and I sourced loads of it, blue nun wine as well, that is as awful as you’re thinking. I even made a flan with quick set jel, tinned fruit and that authentic soggy bottom. Don’t forget your can of tip top to pour over the top.
